It’s common knowledge that roast beef, whether it’s a sirloin joint or rib roast, should always be cooked on the bone because it imparts flavor and heat conductivity. This isn’t for everyone, though, as some of our most well-liked recipes are much simpler to carve and don’t include any bones. Buy what suits you best.

The fat is more crucial than the bone; resist the urge to trim it off since it will baste the meat as it cooks. You can always cut it away when you serve it. You must dust or rub it with flour and/or mustard powder to absorb the fat that is released onto the surface if you want the fat to form a crust.

How long does it take to cook roast beef?

To calculate roast beef cooking time:

A three-rib roast (roughly 3 kg) will serve seven to eight people when cooked on the bone. Calculate roughly 400g per person. One kilogram of beef will feed four people when cooked off the bone. 5kg will serve about six, so 200-300g per person. Determine how long it will take to cook 500g for medium-rare, or 25 minutes for medium use.

Cook beef, either on the bone or off, for 20 minutes at 240C/220C fan/gas 9, then reduce the heat to 180C/160C fan/gas 4. Don’t forget to deduct this 20 minutes from the timing you just calculated.

  • three-bone rib of beef (about 3kg)
  • flour or mustard powder
  • 1 onion, halved

1. Remove the beef from the refrigerator at least 60 minutes prior to cooking. Measure the cooking time and set the oven temperature to 240°C (220°F) or gas 9.

2. Add salt and pepper to the fat and, if desired, rub in some flour or mustard powder.

3. Place the beef in a roasting tin with the two onion halves on top, and roast for 20 minutes. Then, reduce the heat to 180C/160C fan/gas 4 and cook for 1 hour and forty minutes. Remove and rest for at least an hour.
