We definitely recommend using crackers if you have them. An old-fashioned way to add more flavor than just plain breadcrumbs is to add crushed crackers. It’s also a really practical way to finish off that package of crackers you’ve had in your pantry for weeks.

The following ingredients will help you create the best homemade hamburger patties:

  • For the juiciest burgers, we like an 80 lean/20 fat ratio in our ground chuck.
  • The best binder for juicy hamburgers is crushed crackers or Panko bread crumbs. (Could be gluten-free!).
  • Worcestershire sauce – Adds a deep beefy, smoky flavor.
  • Egg: To bind everything together without causing it to dry out
  • Ground beef is softened and tenderized by the enzymes in milk.
  • Seasonings: salt, pepper, onion powder, garlic powder, and/or other preferred spices

To save time during preparation and enhance the taste of your patties, use dried spices in place of fresh herbs when making the hamburger mix. For example, you could add red pepper flakes to make the burger spicier, chili powder and cumin for a Southwestern-inspired bite, or parsley and dill for a Mediterranean flavor.

What You’ll Need To Make Steakhouse Burgers

Begin by making the panade. Using a fork, mash two small pieces of white sandwich bread and 1/3 cup milk in a large bowl to create a chunky paste.

Add 3 minced garlic cloves, 2 tablespoons ketchup, 1-1/2 tablespoons Worcestershire sauce, 2-1/2 teaspoons kosher salt, and 1 teaspoon freshly ground black pepper.

Stir until well combined.

Add 3 pounds of 85% lean ground beef and 3 pounds of finely sliced scallions (if using).

Mix everything together until just combined.

Shape the mixture into balls by dividing it into eight equal portions. Each ball should be flattened into a patty about 4-1/2 inches in diameter and 3/4 inch thick. (Keeping the burgers thick helps prevent the inside from overcooking and guarantees a nice char on the outside.) (To keep the burgers from taking on a dome shape while cooking, make a small indentation in the middle of each patty.)

Burgers should be nicely browned after 2 to 4 minutes on the first side of the grill. Cook for a few more minutes on the other side after flipping, or until the desired doneness is achieved.
