  • Chuck roast: For Mexican Shred Beef, I nearly always use a boneless beef chuck roast, but I’ve also successfully used a leaner cross rib roast. More marbling and fat on cuts means they will get tender enough to shred faster than cuts with less fat. You should cut the tie if your roast comes tied before seasoning. Look for a roast up to 3 ½ pounds, but it will still work if it is a little bit larger or smaller. To make the finished product look cleaner and less greasy, I like to trim any extra fat from the edges.
  • Drained and diced green chilies from a can: A big can of diced green chilies Use two of the smaller 4-ounce cans if your story doesn’t carry the 7-ounce size. The can’s liquid aids in making the beef’s seasoning paste.
