After removing the roast from its packaging, season both sides with kosher salt and pepper. (A).

Plug the instant pot in and press the sauté button. When the display reads “hot,” add the olive oil and heat it up. Then, place the roast fat-side down and sauté it for three minutes, then flip it over and sauté the other side for another three minutes.

Press the cancel button and remove roast from the insert. (B).

After adding red wine to the insert, scrape (deglaze) the pan’s bottom with a wooden spoon. Reposition the roast and stir in the beef broth, sage leaf, dried oregano, and rosemary sprig. (C).

Press the pressure cook button and seal the IP, making sure the venting knob is in the sealed position. Verify that the mode is at high pressure and normal. Set the timer for 60 minutes.

You will perform a natural release after the IP beeps to indicate that it is finished, and it will take about half an hour for the floating valve (or silver button on top) to depress.

Wash and chop the potatoes and carrots into chunks while you wait the full 30 minutes for the IP to release the pressure. Chop the celery into slices width-wise after cutting it in half lengthwise. (D).

Place the lid back on the IP and seal it. Press the pressure cooker button once more after ensuring that the venting knob is in the sealed position. Set the timer for 10 minutes. Remark: the IP will reach pressure faster than it did at first when it was cold.

Wait ten minutes after the timer beeps before performing a quick release. (See the useful advice to learn how to perform a quick release.) ).

After removing the meat from the IP, arrange it on a platter. Also remove the vegetables and set aside.

Instant Pot Bottom Round Roast and Homemade Gravy This recipe is full of flavors. Feel free to change up the seasoning and vegetables as you wish. Feel free to use this recipe as your canvas to experiment or to use what you have on hand.

  • 1 tablespoon of olive oil
  • Two to three pound bottom round roast (you can slice it into big cubes or fill it full)
  • 1 yellow onion, chopped into 1-inch pieces
  • 2 garlic cloves, finely chopped
  • 2 large carrots, peeled and chopped into large chunks
  • 1 large turnip, peeled and chopped into large chunks
  • 1 lb of baby potatoes, washed
  • Eight ounces of Baby Bella mushrooms, cut in half after washing
  • Herbs, either fresh or dried (I used fresh rosemary and thyme sprigs)
  • Four cups of liquid (I used two cups each of water and beef broth)
  • Salt & Pepper
  • 1-2 tablespoons of cornstarch or flour
    1. Turn the Instant Pot on “Sauté” mode. Add the oil. When hot, add the garlic, and onion to brown slightly. Then, add the beef to quickly sear on all sides.

  • Hit “cancel” to turn off the “sauté” mode. Fill the pot with the potatoes, carrots, turnips, liquid, and herbs.
  • For 20 minutes (if the roast is cut into chunks) or 60 minutes (if the roast is left whole), set the “Pressure Cook” mode on High. Press “Start”.
  • Learn from my mistakes and let the pressure release naturally. (I pushed for a speedy release by mistake, which resulted in a starchy mess all over my kitchen.)
  • When the pressure has been released, add in the mushrooms. At this point, your meat should be completely cooked. To determine whether you need to add more seasoning, now is a good opportunity to taste the food.
  • Set to “Pressure Cook” mode on Medium for 5 minutes. Press “Start”. When it is done, let the pressure release naturally.
  • Using a slotted spoon, remove all of the meat and veggies to make the gravy. Then, strain the liquid through a mesh strainer to remove any remaining ingredients.
  • Put the liquid back into the Instant Pot and heat it on medium in the “Sauté” mode. Whisk in the cornstarch, 1 tablespoon at a time. The liquid will start boiling and thickening. For two minutes, or until you achieve a gravy consistency, whisk continuously. Keep in mind that when it cools, the liquid will also get thicker.
  • Serve the meat and vegetables with the gravy.
  • While I was excited to make this recipe in a much shorter time frame with the pressure cooker, it is also a great recipe to make in a slow cooker. In this case, you would want to cook the meat for 8 hours on
