What is The Best Cut of Meat for This Recipe?

I usually use one of three meat cuts for pot roast: chuck roast, brisket, or bottom or top round. Here’s why:

  • When slow-cooked, a chuck roast becomes extremely tender and easily crumbles. This is because the chuck roast has a lot of marbling, or visible fat throughout, which keeps it juicy even after it is cooked down. This also makes it easy to shred. A chuck roast is melt-in-your-mouth delicious!.
  • Because of its high connective tissue content, briskets are tender even after being cooked slowly for a long day. But remember that brisket costs a little more than chuck roast.
  • The roast beef that is sliced at the deli is made from a bottom or top round cut of beef. It comes from the back of the cow and is thinner than the chuck roast and brisket. Due to its leanness, you may wish to add a small amount of extra fat to prevent drying out while it cooks. You can do this with oil or butter.

How Long to Cook a Roast in the Instant Pot

For every pound of meat when cooking a pot roast in an Instant Pot, allow 20 minutes.

  • For a 1-pound roast, cook for 20 minutes.
  • For a 2-pound roast, cook for 40 minutes.
  • For a 3-pound roast, cook for 60 minutes.

Note: It will take an additional 20 to 30 minutes for the Instant Pot to reach pressure. Once cooking, the pressure will naturally release.
