This recipe for Mexican Shredded Beef takes everyday pantry items to new levels and finishes them with a rich, saucy sauce. You will need:

  • Chuck roast: Look for a boneless roast with a bright, white marbling of fat throughout the meat, a deep red color, and a sweet aroma. Grayish brown beef isn’t as fresh and might have spent too much time on the shelf.
  • Oil: You need a little oil for searing the roast. When searing the beef, use an oil with a high smoking point, such as vegetable, avocado, or sunflower oil; avoid using olive oil instead. Olive oil has a lower smoking point than other oils, so it can burn and smoke profusely while leaving behind toxic chemicals and an unpleasant taste.
  • Low-sodium beef broth should be used in order to regulate the amount of salt, and beef bouillon should be added for additional flavor.
  • Beef bouillon: Adds a depth of concentrated beefy flavor. For convenience, I use granulated beef bouillon, but you could also use cubes or better than bouillon in equal measure. If using cubes, crush them up and add them straight to the slow cooker, stirring to dissolve them. You will need three cubes in this recipe.
  • Salsa: Use your favorite salsa, whether chunky or smooth. If you’re not a fan of spicy food, use mild; if you do, use medium.
  • Chopped green chiles: These are deliciously tangy and come in a 4-ounce can to balance the richness of the beef. Use mild diced green chilies to make adjusting the heat simple.
  • Tomato paste: Condenses tomato flavor and combines it with other ingredients to produce a thick, flavorful sauce that is rich and aromatic.
  • Lime juice: The best lime juice is freshly squeezed, but you can also use bottled.
  • Liquid smoke: Gives the dish a delightfully delicate smoky flavor. At your grocery store, liquid smoke is sold in bottles next to the barbecue sauces. I use mesquite but hickory will also work.
  • Brown sugar: This dish’s tangy heat requires a small amount of sugar to balance it out. It will still taste good, just tangier, if you have to leave out the sugar.
  • Dried herbs and spices: To create a spice rub that will bring out the flavor, combine chili powder, ground chipotle pepper, cumin, oregano, smoked paprika, onion powder, garlic powder, ground coriander, salt, and pepper.

The sole distinction is that it needs to be baked for two hours at 300 degrees Fahrenheit in a covered dish. So, season your roast with salt and pepper. After that, transfer some chopped onion and salsa to a baking dish. Nestle in the roast. Pour beef broth over top. After covering, bake it for two hours.
