Equipment

Ingredients & substitutes

  • Brisket of corned beef – I used a 4-pound Make sure it will fit in your baking dish and get the size you need to feed your family.
  • Guinness – You don’t need to use Guinness. Any dark beer will do, but bear in mind that not all beers are dairy-free. Try some apple cider or even cola if you’re trying to stay away from alcohol; they’ll taste a little sweeter but still work really well!

How to cook corned beef in the oven

Soak. As the oven preheats to 325˚F, soak the corned beef in cold water. This helps remove the excess salt. After a few minutes, replace the water if it becomes very hazy, and soak for a total of fifteen minutes.

Season. Drain the water and pat the corned beef dry. Combine the mustard, brown sugar, and seasoning packet in a small bowl. Spread this mixture onto the corned beef. When the fat side is up, this is the ideal time to add seasoning.

Bake. Bake the pan for one hour for every pound, covered with a lid or aluminum foil. Take off the lid for the last fifteen minutes of baking so that the seasoning can get browned. Take the corned beef out of the oven and let it rest for about ten minutes on a cutting board before slicing.
