Season. Drain the water and pat the corned beef dry. Combine the mustard, brown sugar, and seasoning packet in a small bowl. Spread this mixture onto the corned beef. When the fat side is up, this is the ideal time to add seasoning.

Bake. Bake the pan for one hour for every pound, covered with a lid or aluminum foil. Take off the lid for the last fifteen minutes of baking so that the seasoning can get browned. Take the corned beef out of the oven and let it rest for about ten minutes on a cutting board before slicing.
