Place the beef shanks in the cooker. Cook/sear both sides for 3-5 minutes per-side or until brown. Remove the shanks and set aside.

Place the lid on. Pressure cook for forty minutes on high, then let the pressure out naturally. Follow the manufacture instructions for releasing the pressure. Remove the lid. Set cooker back to saute-high. Saute until the liquid reduces to about half.

Gently scrap the crushed tomatoes off the beef. The beef shank should be carefully taken out of the cooker and placed aside. Scoop out and discard grease. Serve with pasta, polenta or mashed potatoes.

Fans of soup dumplings here? Well, no, this isn’t a post about the challenging Shanghainese treat that I will attempt to make someday. This post describes a typical cold appetizer or side dish found at Shanghainese restaurants that serve soup dumplings I can assure you that I have a recipe that works every time because I have made this dish numerous times.

This dish’s versatility lies in its ability to be served cold as an appetizer after being sliced up and chilled. You can add more flavor to the beef by adding crushed red peppers or chili oil on top. Alternatively, you could serve them hot and chunky over some crunchy pan-fried noodles. For maximum umami flavor, make sure to pour a generous amount of thickened sauce over the noodle plate!
