Boiling is the traditional way of preparing corned beef. This method does three things at once: it draws out the excess salt, cooks the meat, and tenderizes the tough cut of brisket. While the flavor and texture of corned beef are largely due to the salt used in the brining process, if some of the salt isn’t removed, the meat may become overly salty.

Place the meat in a large pot and add plenty of water to cover it in order to boil corned beef. If desired, add a couple of tablespoons of pickling spice, a few cloves of garlic, a quartered onion, a carrot, and a few celery stalks. Everything should be brought to a boil, covered, and the heat should be lowered to a gentle simmer. Cook the corned beef (with little to no stirring) for 3 to 4 hours, or until it is fork-tender. When ready to serve, take the corned beef out of the pot and cut it across the grain.

Add potatoes and/or cabbage approximately half an hour before the cooking time is up. As an alternative, bake the corned beef at 200 degrees Fahrenheit or remove it from the pot once it is done and cover it to keep warm. Simmer whole tiny red potatoes and sliced cabbage in the liquid until they are tender.

How to Cook Corned Beef

Corned beef should be simmered until it is fork tender. To make corned beef:

  • Place the corned beef a stock pot. Pour in the bottle of dark beer, the spice packet, and enough water to completely submerge the corned beef.
  • After bringing it to a boil, reduce the heat, and simmer it gently for two to three hours. Depending on the size and shape of the corned beef, this cooking time will change. Suggested cook time is 45-50 minutes per pound. Ensure it is a low simmer. Check a small piece and ensure it’s tender.
  • After the corned beef is fork-tender, remove it from the liquid and let it rest for at least 20 minutes.

Add the vegetables to the corned beef water and simmer for about 25 minutes while the meat is resting. The water’s rich flavor makes it ideal for potatoes, carrots, and cabbage. Toss them in butter, salt and pepper, and fresh parsley.


Corned Beef must always be cut across the grain. You can see the direction of the meat’s fibers by looking at the beef; for the most tender meat, cut in the opposite direction of the fibers!

Instant Pot Corned Beef: The same ingredients can also be used to make Instant Pot Corned Beef. Just fill the Instant Pot with the corned beef, two cups of water, and one bottle of beer. A 3. About 90 minutes will be needed for 5–4 pound corned beef (with 15 minutes natural release).

  • To Freeze. For up to three months, freeze beef in an airtight freezer-safe storage container. Let thaw overnight in the refrigerator before reheating.

You can make your own Reuben sandwiches with leftover corned beef. Top your preferred bread with a few slices of corned beef and either mozzarella or Swiss cheese. Add sauerkraut, pickles, or relish. Finish it off with Dijon mustard, spicy mayo, or both. Before assembling the sandwich, toast the bread. Alternatively, toast the sandwich in its entirety in a skillet over the stovetop (this will help the cheese get extra melty).
