  • 1 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion roughly chopped
  • 2 cloves garlic minced

  • Preheat oven to 275 degrees.
  • Generously season your roast with salt and pepper. A roast that has some marbling in it will be tastier and more flavorful.
  • To a Dutch oven, add two to three tablespoons of olive oil and heat over medium-high heat.
  • When the oil in the pot is hot, add your roughly chopped onions and sauté them until they begin to turn brown. Wont take but a couple of minutes. Don’t allow the garlic burn as you add it and cook it for about 30 seconds. Remove the onions and garlic to a plate.
  • Add the carrots to the same pan and cook for a minute or so, or until they start to turn golden. Remove to same plate as the onions.
  • Add a little extra olive oil to the pan if necessary. After adding the meat to the pan, brown it for approximately one minute on each side. Remove the roast to a plate. Tip: Dont skip this step of browning the meat. You want a good color on your roast.
  • Deglaze the pan with one cup of either red wine or beef stock, scraping the bottom with a whisk to extract all of those delicious bits of flavor from the pan’s bottom.
  • Reposition the roast in the pan and pour in two to three cups of beef stock, or enough to cover the meat halfway. Add the carrots and onion, along with the thyme and rosemary.
  • Close the cover and bake for three hours. The roast is done when it is falling apart.
  • Serve the roast with mashed potatoes and crusty bread so that you can eat up all of the delicious gravy.
