Why do they call it butter chicken?

Because butter is used to make the sauce, they refer to it as butter chicken or murgh makhani. The consistency as well is buttery smooth. The onion and tomatoes are sauteed in butter. After the curry is cooked and pureed, more butter is added to smooth out the base.

Butter Chicken is one of the few exceptions. When I found a Chef recipe for Butter Chicken and realized how simple it is, I was overjoyed. More importantly though, all of the ingredients are readily available at any supermarket. Yes!.

Indeed, it is! It is from Northern India and is known as Murgh Makhani. In contrast to many other Indian curries, this one is fairly mild, and outside of India, it’s become practically everyone’s favorite curry!
